Ingredients
- 1 drumstick, cut
- 1 raw banana, cubed
- 1 carrot, cubed
- 1/2 cup beans, cut
- 1 cup grated coconut
- 2 green chillies
- 1 tsp cumin seeds
- 1/2 cup yogurt
- 1 tbsp coconut oil
- Curry leaves
- Salt to taste
Steps
- Cook vegetables with turmeric, salt, and minimal water until tender.
- Grind coconut, cumin, and green chillies to a coarse paste.
- Add the coconut paste to the vegetables and mix.
- Simmer for 5 minutes.
- Remove from heat, stir in yogurt.
- Drizzle coconut oil and curry leaves on top.
- Serve with rice.
