Chicken Kosha (চিকেন কষা)
Bengali-style slow-cooked chicken in a thick, deeply spiced onion and tomato gravy.

Ingredients
- 750g chicken pieces
- 3 onions, sliced
- 2 tomatoes, chopped
- 2 tbsp ginger-garlic paste
- 1 tsp red chilli powder
- 1 tsp turmeric
- 1 tsp cumin powder
- 1 tsp garam masala
- 3 tbsp mustard oil
- 2 bay leaves
- 3 green cardamom
- Salt to taste
Steps
- Heat mustard oil, fry onions until deep brown.
- Add ginger-garlic paste and fry for 2 minutes.
- Add tomatoes and cook until mushy.
- Add all dry spices and cook for 2 minutes.
- Add chicken pieces, sear on high heat.
- Add a splash of water, cover and cook on low for 30 minutes.
- Uncover and cook on high to reduce the gravy.
- Finish with garam masala. Serve with rice or roti.
