Chicken Kosha (চিকেন কষা)

  1. Heat mustard oil, fry onions until deep brown.
  2. Add ginger-garlic paste and fry for 2 minutes.
  3. Add tomatoes and cook until mushy.
  4. Add all dry spices and cook for 2 minutes.
  5. Add chicken pieces, sear on high heat.
  6. Add a splash of water, cover and cook on low for 30 minutes.
  7. Uncover and cook on high to reduce the gravy.
  8. Finish with garam masala. Serve with rice or roti.
