Ingredients
- 4 chicken breasts, butterflied and flattened
- 2 eggs, beaten
- 1 cup flour
- 1.5 cups panko or fine breadcrumbs
- 1/2 cup grated parmesan
- 2 cups marinara sauce
- 200g fresh mozzarella, sliced
- 1/4 cup olive oil
- Fresh basil leaves
- Salt and pepper
Steps
- Season chicken with salt and pepper.
- Mix breadcrumbs with half the parmesan. Set up a dredge: flour, egg, breadcrumbs.
- Coat each cutlet and shallow fry in olive oil until deeply golden on both sides, about 3 minutes per side.
- Preheat oven to 200°C. Spread marinara in a baking dish.
- Place fried chicken on the sauce, top each with more marinara, mozzarella, and remaining parmesan.
- Bake 12-15 minutes until cheese is melted and bubbling.
- Rest 3 minutes, scatter basil, and serve with spaghetti or a green salad.
