Chicken Shawarma (شاورما الدجاج)
Lebanese-style chicken marinated in warm spices, roasted until crisp at the edges, and wrapped in pita with garlic toum and pickles.

Ingredients
- 750g boneless chicken thighs
- 1/4 cup yogurt
- 3 tbsp olive oil
- 3 tbsp lemon juice
- 4 garlic cloves, minced
- 2 tsp cumin
- 2 tsp coriander powder
- 2 tsp smoked paprika
- 1 tsp turmeric
- 1 tsp cinnamon
- 1/2 tsp allspice
- 1/2 tsp cardamom
- Salt and pepper
- 4 pita breads
- Toum (garlic sauce) or tahini
- Pickles, tomato, and lettuce to serve
Steps
- Whisk yogurt, olive oil, lemon juice, garlic, and all spices into a marinade.
- Coat chicken and marinate at least 2 hours, preferably overnight.
- Heat a grill pan or oven to 220°C.
- Sear chicken 4-5 minutes per side until deeply charred and cooked through.
- Rest 5 minutes, then slice thinly against the grain.
- Warm pita. Smear with toum, layer chicken, pickles, tomato, and lettuce.
- Wrap tight and serve with extra toum and hot sauce.
