Fattoush (فتوش)
A bright Levantine salad of romaine, cucumber, tomato, herbs, and crisp toasted pita, dressed with sumac, lemon, and olive oil.

Ingredients
- 2 pita breads
- 1 romaine lettuce, chopped
- 2 tomatoes, chopped
- 1 cucumber, diced
- 4 radishes, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup flat-leaf parsley
- 1/2 cup mint leaves
- 1/3 cup olive oil
- 3 tbsp lemon juice
- 1 tbsp pomegranate molasses
- 2 tsp sumac
- 1 garlic clove, grated
- Salt and pepper
Steps
- Split pita, brush with olive oil, and bake or fry until deeply crisp. Break into shards.
- Whisk olive oil, lemon juice, pomegranate molasses, sumac, garlic, salt, and pepper into a dressing.
- In a large bowl, combine lettuce, tomatoes, cucumber, radishes, onion, parsley, and mint.
- Just before serving, drizzle the dressing and toss.
- Scatter the pita shards on top and dust with more sumac.
- Serve immediately while the pita is still crisp.
