  1. Split pita, brush with olive oil, and bake or fry until deeply crisp. Break into shards.
  2. Whisk olive oil, lemon juice, pomegranate molasses, sumac, garlic, salt, and pepper into a dressing.
  3. In a large bowl, combine lettuce, tomatoes, cucumber, radishes, onion, parsley, and mint.
  4. Just before serving, drizzle the dressing and toss.
  5. Scatter the pita shards on top and dust with more sumac.
  6. Serve immediately while the pita is still crisp.
