Ingredients
- 2 cups maida (all-purpose flour)
- 2 tbsp ghee
- 4 medium potatoes, halved
- 1 tsp cumin seeds
- 2 bay leaves
- 1 tsp ginger paste
- 1 tsp red chilli powder
- 1/2 tsp garam masala
- 1 tomato, pureed
- Oil for deep frying
- Salt to taste
Steps
- Knead maida with ghee and water into a soft dough. Rest 20 minutes.
- Boil potatoes until just tender, then halve them.
- Heat oil, temper cumin and bay leaves.
- Add ginger paste, tomato puree, and spices. Cook until oil separates.
- Add potatoes, coat well, and simmer for 10 minutes.
- Roll small dough balls into thin discs.
- Deep fry luchis until they puff up golden.
- Serve hot luchis with alur dom.
