  1. In a large bowl, combine flour, besan, methi, yogurt, and all spices.
  2. Drizzle oil and mix, then add water little by little to form a soft, pliable dough.
  3. Rest the dough for 15 minutes.
  4. Divide into small balls and roll out thin discs, dusting with flour as needed.
  5. Cook on a hot tawa, flipping once, and drizzle a little oil on each side until golden brown spots appear.
  6. Stack and serve warm with yogurt, chhundo, or pickle.
