  1. Boil milk and reduce to about 3/4 volume.
  2. Melt jaggery separately and strain.
  3. Mix jaggery into warm milk. Let it cool to lukewarm.
  4. Whisk in yogurt starter and cardamom.
  5. Pour into earthen pots or bowls.
  6. Cover and set in a warm place for 6-8 hours.
  7. Refrigerate until chilled. Serve cold.
