  1. Clean banana blossom, remove outer petals, chop finely and soak in water.
  2. Boil or steam the chopped mocha until soft. Drain.
  3. Heat mustard oil, temper cumin and bay leaves.
  4. Add potatoes and fry until light golden.
  5. Add the cooked mocha, turmeric, and salt. Stir well.
  6. Cook on medium heat for 10-12 minutes.
  7. Add grated coconut, garam masala, and sugar. Mix well.
  8. Cook 5 more minutes until dry. Serve with rice.
