  1. Soak rice noodles in warm water for 20 minutes. Drain.
  2. Mix tamarind paste, soy sauce, and sugar for the sauce.
  3. Heat oil in a wok, scramble eggs, set aside.
  4. Sauté garlic, add noodles and sauce. Toss on high heat.
  5. Add eggs and bean sprouts, toss briefly.
  6. Serve with crushed peanuts, spring onions, lime, and chilli flakes.
