Pad Thai

Ingredients
- 200g flat rice noodles
- 2 eggs
- 1 cup bean sprouts
- 3 tbsp tamarind paste
- 2 tbsp fish sauce or soy sauce
- 1 tbsp sugar
- 4 cloves garlic, minced
- 3 tbsp roasted peanuts, crushed
- 2 spring onions, chopped
- 1 lime
- 2 tbsp oil
- Red chilli flakes
Steps
- Soak rice noodles in warm water for 20 minutes. Drain.
- Mix tamarind paste, soy sauce, and sugar for the sauce.
- Heat oil in a wok, scramble eggs, set aside.
- Sauté garlic, add noodles and sauce. Toss on high heat.
- Add eggs and bean sprouts, toss briefly.
- Serve with crushed peanuts, spring onions, lime, and chilli flakes.
