Pav Bhaji
A spicy mash of mixed vegetables served with buttery, toasted pav buns — Mumbai s favourite street food.

Ingredients
- 3 potatoes, boiled
- 1 cup cauliflower, boiled
- 1/2 cup peas, boiled
- 2 tomatoes, chopped
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 tbsp pav bhaji masala
- 3 tbsp butter
- 8 pav buns
- Lemon juice
- Salt to taste
- Coriander leaves
Steps
- Boil and mash all vegetables coarsely.
- Heat butter, sauté onions and bell pepper.
- Add tomatoes, pav bhaji masala, and cook until soft.
- Add all mashed vegetables, mix and mash further on heat.
- Add water for desired consistency, simmer 10 minutes.
- Slit and toast pav buns with butter.
- Serve bhaji topped with butter, onion, and lemon.
