  1. Cook chana dal until soft but not mushy; drain very well.
  2. On low heat, mash dal with jaggery, cardamom, and nutmeg until a thick puran forms. Cool.
  3. Knead flour, semolina, oil, salt, and water into a soft, rested dough.
  4. Take a dough ball, flatten, place a larger ball of puran inside, seal, and roll gently into a disc.
  5. Cook on a hot tawa, flipping with generous ghee until golden on both sides.
  6. Serve warm with extra ghee, milk, or saar (thin dal).
