Puran Poli (पुरण पोळी)

Ingredients
- 1 cup chana dal
- 1 cup jaggery, grated
- 1 tsp cardamom powder
- 1/4 tsp nutmeg powder
- 1.5 cups whole wheat flour
- 1/4 cup fine semolina
- 3 tbsp oil
- Ghee for cooking
- A pinch of salt
- Water as needed
Steps
- Cook chana dal until soft but not mushy; drain very well.
- On low heat, mash dal with jaggery, cardamom, and nutmeg until a thick puran forms. Cool.
- Knead flour, semolina, oil, salt, and water into a soft, rested dough.
- Take a dough ball, flatten, place a larger ball of puran inside, seal, and roll gently into a disc.
- Cook on a hot tawa, flipping with generous ghee until golden on both sides.
- Serve warm with extra ghee, milk, or saar (thin dal).
