Ingredients
- 200g ramen noodles
- 4 cups chicken stock
- 2 tbsp soy sauce
- 1 tbsp miso paste
- 1 tsp sesame oil
- 2 soft-boiled eggs
- 100g mushrooms, sliced
- 2 spring onions, sliced
- Nori sheets
- 1 tbsp ginger, grated
- 2 cloves garlic, minced
- Chilli oil (optional)
Steps
- Simmer chicken stock with ginger, garlic, soy sauce, and miso.
- Cook ramen noodles according to package. Drain.
- Sauté mushrooms in sesame oil.
- Place noodles in bowls, ladle hot broth over.
- Top with halved soft-boiled egg, mushrooms, nori, and spring onions.
- Drizzle chilli oil if desired. Serve immediately.
