A rich Kashmiri mutton curry with deep red colour from Kashmiri chillies and aromatic whole spices.

Ingredients
- 750g mutton pieces
- 1 cup yogurt
- 2 tbsp Kashmiri red chilli powder
- 1 tsp fennel powder
- 1 tsp dry ginger powder
- 4 green cardamom
- 2 black cardamom
- 4 cloves
- 1 cinnamon stick
- 2 bay leaves
- 3 tbsp oil or ghee
- Salt to taste
Steps
- Heat oil, add whole spices and bay leaves.
- Add mutton pieces and sear on high heat.
- Add Kashmiri chilli powder and dry ginger. Stir well.
- Add yogurt gradually, stirring continuously.
- Add fennel powder and salt.
- Add water, cover and slow-cook for 60-70 minutes.
- Cook until oil rises to the top and gravy thickens.
- Serve with steamed rice or naan.
