Sandesh (সন্দেশ)
Delicate Bengali sweet made from fresh cottage cheese and sugar, flavoured with cardamom or saffron.

Ingredients
- 1 litre milk
- 2 tbsp lemon juice
- 1/3 cup powdered sugar
- 1/4 tsp cardamom powder
- A few saffron strands
- Pistachios for garnish
Steps
- Curdle milk with lemon juice and drain whey.
- Knead chenna until smooth.
- Cook chenna and sugar in a non-stick pan on low heat for 5-7 minutes.
- Add cardamom and saffron, mix well.
- When the mixture leaves the sides of the pan, remove from heat.
- Shape into moulds or small rounds.
- Garnish with pistachios. Serve at room temperature or chilled.
