Sandesh (সন্দেশ)

  1. Curdle milk with lemon juice and drain whey.
  2. Knead chenna until smooth.
  3. Cook chenna and sugar in a non-stick pan on low heat for 5-7 minutes.
  4. Add cardamom and saffron, mix well.
  5. When the mixture leaves the sides of the pan, remove from heat.
  6. Shape into moulds or small rounds.
  7. Garnish with pistachios. Serve at room temperature or chilled.
