Ingredients
- 5 ripe tomatoes, pureed
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- A pinch of asafoetida
- 8 curry leaves
- 1 tsp ginger-green chilli paste
- 1/2 tsp turmeric
- 1 tsp red chilli powder
- 1 tsp coriander-cumin powder
- 1 tbsp jaggery
- 1 cup thick sev (nylon sev)
- Fresh coriander to garnish
- Salt to taste
Steps
- Heat oil and splutter mustard seeds, cumin, curry leaves, and asafoetida.
- Add ginger-chilli paste and sauté for 30 seconds.
- Pour in tomato puree, turmeric, chilli powder, coriander-cumin powder, jaggery, and salt.
- Simmer for 8-10 minutes until oil separates.
- Adjust consistency with a splash of water if needed.
- Just before serving, stir in the sev so it stays slightly crunchy.
- Garnish with fresh coriander and serve hot with rotli or bhakhri.
