  1. Heat oil and splutter mustard seeds, cumin, curry leaves, and asafoetida.
  2. Add ginger-chilli paste and sauté for 30 seconds.
  3. Pour in tomato puree, turmeric, chilli powder, coriander-cumin powder, jaggery, and salt.
  4. Simmer for 8-10 minutes until oil separates.
  5. Adjust consistency with a splash of water if needed.
  6. Just before serving, stir in the sev so it stays slightly crunchy.
  7. Garnish with fresh coriander and serve hot with rotli or bhakhri.
