Thai Green Curry

Ingredients
- 400g chicken, cubed
- 1 can coconut milk (400ml)
- 3 tbsp green curry paste
- 1 zucchini, sliced
- 1/2 cup bamboo shoots
- 1 bell pepper, sliced
- 2 tbsp fish sauce
- 1 tbsp sugar
- Thai basil leaves
- 1 tbsp oil
- 2 kaffir lime leaves
Steps
- Heat oil, fry green curry paste for 1 minute.
- Add half the coconut milk and cook until oil separates.
- Add chicken and cook 5 minutes.
- Add remaining coconut milk, vegetables, and kaffir lime leaves.
- Add fish sauce and sugar. Simmer 10 minutes.
- Stir in Thai basil. Serve with jasmine rice.
