Cabbage Thoran (തോരൻ)
Finely shredded cabbage stir-fried with freshly ground coconut, green chilli, and curry leaves — a dry, aromatic Kerala side dish.

Ingredients
- 1/2 medium cabbage, finely shredded
- 1 cup fresh grated coconut
- 2 green chillies
- 4 small shallots
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric
- 2 tbsp coconut oil
- 1 tsp mustard seeds
- 2 dried red chillies
- 12 curry leaves
- 1 tbsp urad dal
- Salt to taste
Steps
- Coarsely pound coconut with green chillies, shallots, cumin, and turmeric.
- Heat coconut oil, splutter mustard seeds, urad dal, red chillies, and curry leaves.
- Add cabbage and salt, toss and cover for 3-4 minutes until just softened.
- Uncover, stir in the coconut mix, and cook on high for 3 minutes — do not let cabbage brown.
- Serve hot as part of a sadya or with rice and rasam.
