  1. Coarsely pound coconut with green chillies, shallots, cumin, and turmeric.
  2. Heat coconut oil, splutter mustard seeds, urad dal, red chillies, and curry leaves.
  3. Add cabbage and salt, toss and cover for 3-4 minutes until just softened.
  4. Uncover, stir in the coconut mix, and cook on high for 3 minutes — do not let cabbage brown.
  5. Serve hot as part of a sadya or with rice and rasam.
