Ingredients
- 4 large potatoes, boiled and mashed
- 1 tbsp ginger-garlic-green chilli paste
- 1 tsp mustard seeds
- 8 curry leaves
- 1/2 tsp turmeric
- 1/4 tsp asafoetida
- 1 cup besan
- 1/4 tsp baking soda
- 8 pav buns
- 2 tbsp butter
- Dry garlic chutney
- Fried green chillies
- Oil for deep frying
- Salt to taste
Steps
- Temper mustard seeds, curry leaves, turmeric, and asafoetida in oil.
- Add ginger-garlic-chilli paste and sauté, then fold into mashed potatoes with salt.
- Shape into smooth balls and rest for 10 minutes.
- Make a thick batter from besan, baking soda, salt, and water.
- Dip each vada in the batter and deep fry until crisp and golden.
- Slit pav, toast with butter, smear with garlic chutney.
- Place a vada inside, top with a fried chilli, and serve hot.
