Veg Fried Rice
Day-old rice stir-fried with vegetables, soy sauce, and a hint of vinegar — fast, satisfying, and versatile.

Ingredients
- 3 cups cooked rice (day-old, cold)
- 1 carrot, diced
- 1/2 cup peas
- 1/2 cup beans, chopped
- 1/2 cup cabbage, shredded
- 4 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp vinegar
- 2 tbsp oil
- Spring onions
- White pepper
- Salt to taste
Steps
- Heat oil in a wok on very high heat.
- Add garlic, stir fry briefly.
- Add all vegetables, stir fry 2-3 minutes.
- Add cold rice and break up any clumps.
- Add soy sauce, vinegar, white pepper, and salt.
- Toss everything on high heat for 3-4 minutes.
- Garnish with spring onions. Serve with manchurian or chilli chicken.
